12 soaked Bamboo Skewers
300g Lamb Mince
2 Cloves of Garlic
1 tsp fennel seed
1 tsp cumin seed
1 tsp coriander seed
2 tbsp flat parsley chopped
1 egg
1 green chilli, deseeded and chopped
Salt and Pepper
Simple but delicious. Sink your teeth into this tasty Lamb Kofte all cooked on your BBQ grill, with a delicious dipping side of homemade Raita.
Heat your BBQ on full heat.
In a bowl combine all the ingredients with your hands, and season well.
Take out the minced lamb mix and shape in your hands carefully sliding the mixture onto each skewer. This can be done well in advance and refrigerated until ready to use.
When you have used up all your mixture place the Kofta’s on the BBQ, colouring on both sides for about 15 minutes.
(TIP: To prevent your Kofta’s sticking, use the Norfolk Grills Grill Mat sold seperately, it’s great for Fish dishes too!)
For the Raita:-
300g Greek Yoghurt
20g Chopped Mint
20g Chopped Coriander
1 Cucumber, halved down the middle and seeds removed
Rind of half a lemon
Sprinkle of cumin powder
1/2 tsp chilli powder
Salt and Pepper
In the bowl, grate the cucumber in the yoghurt, then combine all the other ingredients. Stir well and keep refrigerated until ready.
